EPA and DHA reduce the breakdown of triglycerides in fat cells while increasing their breakdown in the heart and skeletal muscle. Fish oils cause these fatty acids to be assimilated by adipose tissue and decrease their delivery to the liver. This prevents their incorporation into very low-density lipoproteins (the lipoprotein molecules that transport lipids from the liver to other parts of the body) and results in less very low-density lipoprotein production. Beta-oxidation of fatty acids in the liver, fat, heart, and skeletal muscle also increases. Fatty acids are thus converted to acetyl coenzyme A for energy production in the Krebs cycle and reduces the amount of fatty acids available for triglyceride synthesis. Genes that regulate triglyceride synthesis, storage, and beta-oxidation are also influenced by phytosterols. In randomized, placebo-controlled trials, a daily intake of 1.3 to 1.4 g of EPA and DHA taken in conjunction with phytosterols for 3 to 4 weeks significantly reduced serum triglycerides by approximately 14 to 25% in hyperlipidemic adults.
